Pour those drinks, it is time to celebrate! We got through 2016 guys. That deserves a drink.
Many people keep mentioning how this was horrible or a ‘fail’ of a year. Well, maybe, but I choose to see it as something else.
It’s another year! (woot) Another year I am blessed enough to still be on this earth, blessed to spend it with family and friends, blessed to wake up every morning with a purpose and drive to do what I love.
If you have a roof over your head, food in your belly and a warm bed to crawl into. You are blessed.
Just because another year rolls around does that magically mean it’s all going to change. Unless, we purposely decide to make and be that change. Purposely decide to see the positives in life.
So for me, 2016 was another fabulous year, and what better way to recap this 2016 year then with some epic baking fails. Because my friends, this is real life. Sh** is going to happen.
And by sh** I mean this chunk of extremely chewy and unbaked (but it was totally baked) Chocolate Chip Banana Bread. Thisss went into the trash. After a few fails we figured it out and it turned out amazinggggg.
THEN! This year we really began getting our hands dirty with baking. This was the first attempt to a gluten-free cake…. no bueno. It crumbled simply by looking at it. LOL
I guess 2016 was the year of baking. Our fifth attempt at pumpkin bread. Chewy, very chewy, and not in a good way at all. Dense, unbaked.. it went into the trash.
But at least it wasn’t crumbly! We figured how to fix that problem quickly in 2016.
Ummmm, chocolate cake? orrrr chocolate pudding? Anyone?
We didn’t give up and got the flourless chocolate cake ON POINT, eventually. Mmm… I’d love a slice… the good recipe, not this sloppy, who knows what this is mess of a cake.

Overall, it seems 2016 was the year of gluten-free baking. Totally not on purpose but totally not sorry.
As of 2017 we will be back on track with recipes. This week (On Christmas morning) I came down with a horrible cold/the plague, and am still trying to recover. Yesterday I just didn’t have it in me to even complete our recipe for this week.
Plus, seeing what REALLY goes on behind in the VB kitchen is more fun anyways.
