So WHAT have we been up to these past couple months?
Forgive me. I feel like a horrible horrible friend as I missed our August lunch date! *GASP*
I’m trying to make myself my accountable on these posts so that is why I’m shaming myself with that intro.
I know I kind of left you hanging after our July lunch date. The theme of this post – We are finally settled in.
Coffee Shop Dates
We’ve settled on a new date theme since we moved here. We head to a new coffee or tea shop each week. We both disconnect from our phones to sit and chat or read the paper.
There is a lovely shop in our town that serves gluten-free baked goods like you see below is a raspberry sponge cake. It actually gave me the idea of a recipe that will be coming to you soon.
The Reading of the Month
The air is beginning to have a chill to it. As we speak I’m bundled up in a scarf and blanket refusing to turn the heat on. It is only natural that a good book should be involved with this situation.
I started reading one book this month and it ended up becoming too spooky for me. It totally misled me. . . I didn’t appreciate it. It said it was about fantasy and in fact was just about ghosts. . . no bueno . . . no thank you.
I’m currently reading The Dwarves now which is in FACT a real fantasy. It is about, well, dwarves. It is really good so far and if you like fantasy that is about elves, magic and that sort of fiction I can definitely recommend it.
Found out R has already read it after I checked it out from the library so great minds think alike. So far he is right, it is a great read.
My biggest problem right now is not falling asleep after about 30 minutes of reading. Something about reading relaxes me so much it puts me to sleep.
Speaking of books (. . . that hopefully won’t put you to sleep)
The Easy Gluten-Free Cookbook is still doing great and ranking on the first page of Amazon when you search Gluten-Free Cookbook!
Thank you so much everyone. I was going through the reviews around the web about our cookbook the other day and it melted my heart beyond belief to hear the positive feedback.
Knowing that we are helping people who have to follow this diet makes everything worth it. If you haven’t grabbed yourself a copy yet or know someone who might get some use of it don’t forget that Christmas is around the corner.
Our first house guests
Our first visitors arrived since we moved. To be honest, they are the reason we missed the August Lunch Date. So blame them. 😉
We enjoyed a pint on the prom one warmer evening. The open container drinking policy that happens here is pretty awesome and something to get use too vs. living in the United States.
There is actually no open container laws in Ireland. You’ll find people cracking open a pint on the bus quite frequently.
Wedding in Mullingar
We are ashamed to admit that this is the first time we’ve left the city since we’ve moved here! It was a fabulous reason though, our friends got married!
I love weddings and everything they represent. Love is such a beautiful thing to witness. You can tell they love each other and we look forward to the many more years we get to be there to witness it grow even more. <3
Marriage does have its trials but being able to grow and love each other into something far deeper and stronger is one of the most beautiful things about. Becoming a team.
This trip did push us to try and make a point to doing more out of Dublin but at this point now that R is in school the weekends are kind of designated to hanging out with friends, finishing up on schoolwork and relaxing.
Being Settled in = Moving Furniture Around. . . again.
I would qualify myself as officially being in the nesting phase of our move. Now that we know for a fact we are staying here my instincts and my love of decorating is kicking in.
I moved the television to the corner of the living room last week. Still can’t decide if I like it. What do you think??
It helps with the glare of the natural light that just spills into this room. I love the natural light but don’t like having to close the blinds so I can see the tv. I think if I get a leaning bookcase to the right of the television stand I’ll like it. . . Thoughts?
I also think I need to invest back into a sound bar for the television. We had one back in the states and I miss it.
Have I ever told you guys that my hearing is absolutely the worst? Too many concerts back in my high school days and I’m terrified what my hearing is going to be like 30 years from now if I’m lucky to live till then.
Motivational Quote of the Month
I got myself one of these boards that I’ve been wanting FOREVER. I of course had to put my favorite quote right now on it. You see it right when you walk into our kitchen every single morning.
THAT is exactly what I need to be reminded of every single day right now.
I am a creature of comfort and I have to push myself out of my comfort zone constantly. The greatest things that have happened are when you decide to just jump and go for whatever it might be that day or year.
Don’t let fear and fear of the unknown hold you back.
Pottery Classes Begins
I am so excited for this. Learning pottery is something I’ve wanted to get back into for years. I did a little bit of pottery, woodworking and painting back in high school but really have been wanting to do more and create more now.
I felt so relaxed and centered during our first nights class. It is a later class and keeps me up later than I’d like but totally worth it.
This is exactly what the doctor ordered. Lucky me, one of my friends decided to join me in the class too!
Some of my favorite recipes this month
- Slow Cooker Jambalaya
- Gluten-Free Chocolate Chip Banana Bread – I’ve been making this into big bakery muffins. Makes 6 of them. 😉
- Chicken Tikka Masla
- Picadillo Mexican Beef
- Oh and anything and everything with cajun. . . recipes with that soon to come.
So that is the past couple months and what we have been up too. As always, thank you for your personal and thoughtful comments and responses. These posts and your comments are some of my favorite! <3
