Hello Easy No Bake Energy Bites.

You say you are gluten-free, dairy-free, low-sugar and perfectly delicious?

Sounds like my next pre-workout snack.

I really need to get back to daily workouts. Right now, I’m working out just a couple of days a week and there is zero excitement about it. I’m struggling here in the Michigan tundra. Actually, more like “No Sun Michigan”.

Why is it so gosh darn cloudy here!? Since returning from Tennessee two weeks ago, I don’t think I’ve seen the sun once.

I need some pep in my step. And maybe a high dose of Vitamin D since it’s obvious I am not getting any from this non-existent sun.

Green juice and No Bake Energy Bites may be a good action plan to get the pep I need.

(Seriously, as I write this, I am considering lying down on my office floor for a cat nap.)

Visit Michigan people. It is a beautiful state, but I do not recommend living here if you like the sun and warmth. It’s just not here. Not only do we need bites of energy, we need some greens in our lives. Vegetables are always a fabulous way to get that extra boost of needed energy.

As I’ve mentioned before, I always turn to juicing when I’ve accidentally been gluten-poisoned. It’s a fabulous nutrient boost that does the body good.

This is true whether juicing a fresh cup of homemade orange juice or my personal favorite, a super duper green juice. I prefer green juices. They are lower in sugar and have nutrients out of this world packed away in them.

That said, there is one thing I must confess: I have always struggled with kale.

I know! Being a healthy kind of gal and an advocate of healthy eating, I should like kale, but I seriously struggle with it.

I tried endlessly to juice kale myself and ‘hide’ it in a juice. For all my efforts, the result was blah, just blah, and so disgusting.

That was, until I found the Kale Blazer by Naked Juice, and it gave me the idea to combine celery juice and kale! Seriously, I don’t know what magical powers celery has, but one of them is to hide the flavor of kale so that you can still get its awesome nutrients down. #Epic.

If you don’t have the time or resources to purchase a juicer, Kale Blazer is a great option. In my case, sometimes I just don’t have the time to juice a green glass and then clean the juicer.

Uhh, if you are new to juicing, do not, I repeat, do not expect to come home and clean the juicer later because:

A.) It will smell so bad you will think twice about eating any food for hours; and

B.) The shreds of vegetables are tirelessly horrible to clean off after drying on.

Kale may be growing on me though, sort of. Just last weekend in Tennessee my sister shared a kale salad recipe with me. I told her I’m willing to try it, but made no promises . . .

Guys, I actually really loved it. I’ll be sharing it with you all soon because if I, the Kale kind of hater will eat it, I’m pretty sure anyone will.

No Bake Energy Bites made with protein packed peanut butter and fuel burning oat flour. With just 5-Ingredients! { Gluten-Free, Dairy-Free, Vegan, Low-Sugar, Refined Sugar-Free }

Yield: 8

Prep Time:10 min

Cook Time:0 min

Total Time:10 min

Ingredients:

  • 1 cup oat flour (Approx 2 cup Quick Oats)
  • 1 cup crunchy peanut butter (smooth peanut butter will work too)
  • 4 ounces unsweetened applesauce ( approx 1/2 cup)
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons honey or maple syrup
Optional:
  • 2 Tablespoons of mini chocolate chips

Directions:

  • 1. To make oat flour: Pulse 2 cups of quick oats in a food processor for 15-30 seconds.
  • 2. Add peanut butter, applesauce, vanilla extract, and honey.
  • 3. Pulse in processor until well combined, fold in mini chocolate chips.
  • 4. Roll dough into 9 energy bites. Store in a airtight container in the fridge.
