These Healthy Peanut Butter Chocolate Thumbprint Cookies will turn any frown upside down.

Especially once you hear how dang healthy these bad boys are!

To make, use my absolute favorite skinny peanut butter cookies as the base for these thumbprint cookies and fill them with creamy and decadent healthy chocolate frosting made with avocados!

Take that perfect skinny peanut butter cookie base, roll it into perfect balls, and then push them into little nests BEFORE baking.

By the way, you see that nice white background behind all these pictures? It is all an illusion; my photography room is in shambles.

For the past two years, I’ve been using the family room in my house as my photography studio because it’s seriously not being used for anything else.

When we first moved into this house, there were 4 rooms completely empty. A 3 Bedroom house with two living areas (living room PLUS a family room) is rather large for just two people.

Every other room has found a purpose except for this ONE last room. Oddly enough, it is the largest room in the house and the grossest room of all. Blue carpet, striped wallpaper . . . do I need to say more?

Now that I’m full-time here at VB, I’ve decided it’s time to give this room a face lift and actually spend time remodeling it. I’ll share the progress on Snapchat (username: VeggieBalance).

We have another long deployment to get through with R before we move down south. Of course, I’ve been looking at houses online because my inner-house-loving-dreaming-nerd loves looking at houses and torturing myself until we can actually make the move.

I keep finding houses 2x larger then our current house on acres of land for so cheap! Then I’m reminded, it is just the two of us . . .

What are we going to do with 5 bedrooms and 3 baths!?! I must ponder what to do with even MORE space (if that is even possible).

Meanwhile, you’ll want to whip up a batch of healthy chocolate frosting while these peanut butter cookies are baking.

Once you take them out of the oven, push the thumbprint down just a little bit more. It creates an epic chewy center that is to die for.

Swirl a hefty helping of frosting onto cooled cookies and you are ready to devour.

Ingredients:

  • Peanut Butter Cookie Base
  • 1/2 cup creamy peanut butter (substitute sunflower butter if needed for peanut allergy)
  • 1/3 cup almond flour (Just recently tried a new brand in bulk and have liked it )
  • 1/4 teaspoon baking soda
  • 3 teaspoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 egg white
  • Healthy Chocolate Frosting

Directions:

  • 1. Preheat oven to 350 degrees F.
  • 2. Prepare baking sheet with parchment paper.
  • 3. In medium size bowl mix peanut butter, almond flour, baking soda, honey, vanilla extract and egg white.
  • 4. Form balls of dough with hands about 1 inch each.
  • 5. Flat each cookie ball with hands, press fingers gently into the center to create a indent.
  • 6. Bake for 8-10 minutes.
  • 7. Meanwhile prepare chocolate frosting (Recipe Directions Here).
  • 8. Push cookie centers back down with finger. Allow cookies to full cool.
  • 9. Pipe 1 Tablespoon of frosting into cookie centers, or spoon into center if you do not have a piping bag.
