My long life obsession has brought quinoa into the mix.

Yes, I am obsessed with vegetable fried rice. However, after many days of eating plain white rice in Japan, I needed quinoa to tag-team in.

Guess what? This Vegetable Fried Quinoa is everything you love in vegetable fried rice! Simple and savory.

We’ve got our Chicken Fried Rice recipe that R swoons over since there is chicken involved. But as you know, most of the time chicken and I aren’t best friends.

Well, that is unless they are chopped into pieces, breaded and sauced like our buffalo chicken nuggets. It’s true. I’m a 6-year-old in a 28-year-old’s body.

Vegetable fried quinoa it is for me! What other favorite veggies to add:

  • Carrots
  • Green Peas
  • Snow Peas
  • Snap Peas
  • Broccoli
  • Baby Corn
  • Egg
  • Water Chestnut
  • Green Onion

Oooo yeah. Tons of delicious veggies available for the vegetable fried quinoa party.

To be honest, most of the time I just throw in whatever is available in my fridge at the time. What about you?

How-To Make to the Perfect Fluffy Vegetable Fried Quinoa

  • Make sure you rinse off the quinoa prior to cooking. It’ll help with removing any lingering bitterness from the quinoa.

I sometimes skip this step if the quinoa is going to be swimming in other flavors, like with our Vegetarian Mexican Quinoa dish. But when the quinoa recipe is more mild in flavors always rinse to make sure the bitterness ‘film’ is rinsed off.

Adding this Vegetable Fried Quinoa to the weeknight dinner hustle is necessary. Pack with your favorite veggies, get your greens on and ready yourself for tomorrow. Because vegetable fried quinoa or vegetable fried rice both are the classic of comfort food in my home.

Vegetable Fried Quinoa Recipe

Total Time:30 min

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 Tablespoon sesame oil
  • 1 small onion, chopped
  • 1 cups baby carrots, chopped or sliced
  • 1 cups frozen peas
  • 1 cup sugar snap peas
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 2 Tablespoons gluten-free tamari sauce + more to taste

Directions:

  • 1. Rinse quinoa under water.
  • 2. In a small saucepan add quinoa and vegetable broth. Cook quinoa to according to package instructions, until light and fluffy.
  • 3. In a large skillet over medium heat. Add sesame oil, onion, carrots, peas, snap peas, garlic powder, ground ginger, salt and tamari sauce. Cook for 3-4 minutes, or until carrots of tender.
  • 4. Stir in quinoa. Season with additional tamari sauce if desired and serve immediately.
