Vegetarian Bolognese Sauce (Vegan Spaghetti Sauce)

Is a vegetarian bolognese sauce possible? One night I was determined to find a vegetarian meat replacement that was gluten-free and would mimic beef in the best way possible.

After a couple tries and making our vegetarian taco meat recipe, I realized I wasn’t the only one looking for a homemade vegetarian meat replacement recipe. Readers have been raving about this recipe ever since.

What is in our vegetarian bolognese sauce that is indeed makes it meat-free and also vegan?

  • Cashews
  • Mushrooms

Yep, 2 simple ingredients and as I said in our Vegetarian Taco Meat post, just hear me out and give it a try. You’ve got to try it out before you knock it.

Tip: If you aren’t the biggest fan of mushrooms (like R) I’d advise you cut the vegetarian meat in half while mixed into the spaghetti sauce. Use the other half to make for tacos later that week.

The mushroom flavor was a little more apparent using the entire batch in the spaghetti sauce as it was a majority of the sauce. So either double the sauce or halve the meat replacement.

Vegetarian Bolognese Sauce (Vegan Spaghetti Sauce)

As you know, we are about making things easier. I personally love leaving myself only one pan to clean.

Make your meat replacement, set aside and cook down the sauce in the same pan. Hello easy clean-up.

Some ways to make this Vegetarian Bolognese Sauce recipe even easier.

  • Ditch the extra spaghetti sauce steps and use store bought.
  • Got Fresh Basil? Elevate that sauce by using it! Fresh basil is my jam and brings such amazing flavor.
  • Drink red wine. Yep. A splash in the sauce and a glass of wine makes cooking easier. 😉

There are several ways to elevate store bought spaghetti sauce, but those two above will make a simple jar of spaghetti sauce into a 4-star dinner.

Add some homemade garlic bread to make the dinner absolutely complete.

Even your mushroom haters will like this! I have a mushroom hater in my family. Don’t knock this Vegetarian Bolognese Sauce until you try it. Let me know what you think!

Yield: 8

Prep Time:15 min

Cook Time:30 min

Total Time:45 min

Ingredients:

Vegetarian Taco Meat Replacement

  • 4 cups sliced white button mushrooms
  • 1 cup roasted cashews (I like them lightly salted)
  • 1/8 teaspoon salt (omit if cashews are salted)

Bolognese Sauce

  • 2 Tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 (15 oz cans) diced tomatoes
  • 1 1/2 Tablespoons garlic powder
  • 2 teaspoons dried oregano
  • 5-6 fresh chopped basil leaves or 2 teaspoon dried basil
  • 1 teaspoon dried parlsey
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup red wine

Directions:

  • 1. In a food processor, pulse mushrooms, cashews and salt until it creates a crumbly mixture, Pulse apprx 10-12 times. You want to have little bites of cashews and mushroom in the mixture still, do not over process it.
  • 2. In a large skillet over medium heat, add olive oil and vegetarian taco meat mixture. Cook 4-5 minutes to heat mixture through, turn heat down to low, cook for another 5-8 minutes. Cashews should have very little 'crunch' to them when tasting the mixture. Set mixture aside.
  • 3. In large skillet add olive oil at medium-high heat. Saute onion until onion is tender.
  • 4. Add diced tomatoes, garlic powder, oregano, basil, parsley, black pepper, salt and red wine. Stir together, cover, turn heat down to simmer. Simmer for 15-20 minutes.
  • 5. Optional Step: Remove half of tomato sauce mixture and puree using a blender or immersion blender. Pour back into sauce.
  • 6. Stir in vegetarian meat replacement. For mushroom lovers, add it all. For your skeptics, add 1/2 the vegetarian meat replacement mixture. (See post above what you can use the rest of it with)
  • 7. Simmer until bolognese sauce is heated through, serve onto spaghetti squash noodles or gluten-free noodles. Top with extra basil and cheese, if desired. Serve immediately.

This is our absolute favourite sauce! Before becoming vegan my daughter wasn’t a big meat sauce fan but she loves this sauce. It’s becoming a weekly staple for us. And such an easy recipe!
