Who doesn’t love buckeye balls!? Am I right!?

In our family, buckeyes balls are the food of life. Well, maybe that’s a little extreme. They are, however, a dessert that gets demolished so quickly you wish you had made dozens more.

Hence, I created a healthier version of peanut butter buckeye balls. Less sugar and butter involved? Yes, please.

As always, these peanut butter buckeye bars were made out of laziness. Don’t judge; you’ll thank me.

How these buckeye bars came into existence.

We had a huge event coming up and had to get creative about a treat to bring that is gluten-free and easy.

Buckeyes. Definitely our buckeyes fit that bill. However, the thought of dipping each individual buckeye ball in chocolate filled me with dread. That would be a LOT of work.

So out of laziness, I attempted to make these buckeye bars. Guys, I am never going back to the other way. Seriously, like NEVER again.

Peanut Free Options to make buckeyes

If you have peanut allergies, try this recipe with sunflower butter instead. These bars are also gluten-free, dairy-free, and vegan friendly, not to mention lower in sugar compared to a traditional buckeye!

A normal buckeye ball recipe calls for 1-2 sticks of butter. This peanut butter buckeye bars recipe calls for a total of 4 Tablespoons.

OMG.

If you’d even like to make these low carb and keto friendly there are ways. 😉

Switch the frosting to a low carb cream cheese frosting, swap with low carb chocolate and you’ve got yourself a fantastic low carb dessert!

Peanut Butter Buckeye Bars recipe made easy, no-bake and 3-Ingredients. Everything you love in buckeye balls made into a bar! The result? Less work and just-as-delicious buckeye bars in a snap.

Ingredients:

  • 2 cups vanilla frosting.
  • 1 1/2 cups creamy peanut butter (or sunflower butter for peanut allergies)
  • 1 1/2 cups chocolate chips (or sugar-free chocolate chips for low carb)
  • 1 Tablespoon dairy-free butter (plain butter works too)

Directions:

  • 1. Prepare a 9x13 pan by lining it with parchment paper.
  • 2. Combine frosting and peanut butter in a medium microwave safe bowl. Microwave for 30 seconds, stir, repeat this step until frosting and peanut butter are melted together. Apprx 1.5 minutes.
  • 3. Pour melted peanut butter into 9x13 pan. Press mixture into the pan evenly.
  • 4. In a glass microwave save bowl, melt chocolate chips and butter for 30 seconds, stir, repeat this step until chocolate is melted.
  • 5. Pour melted chocolate over peanut butter buckeye bars. Smooth chocolate over bars evenly.
  • 6. Allow chocolate to set at least 1 hour.
  • 7. Pull out of 9x13 pan, with chocolate side facing up slice into small squares. Flip bars over to the peanut butter side (See Video Demo) and cut again to ensure a clean buckeye bar is made.
  • 8. Drizzle tops with melted chocolate if desired.

        How long do you think these would stay fresh? I like to make several desserts and spread them throughout Christmas week for different family gatherings.

          At least a week I would say, if not more around 1.5-2 weeks. Honestly, they go so quickly in our house I haven’t really gotten a chance to ‘TEST’ out how long they really do last, but that would be my guess. 🙂

            I actually made these again for the holidays also, andddd they are already gone… So I guess I’m making another batch!I should of split them up like you and then HIDE them until the time. lol

    Hi! When you are talking about these, you say : A normal buckeye ball recipe calls for 1-2 sticks of butter. This peanut butter buckeye bars recipe calls for a total of 3 Tablespoons.
    In the recipe, it calls for 1 Tablespoon. Where do you use the other 2 Tablespoons?

      Hi Debbie!

      Well let me first admit that I definitely didn’t do my math right. It is actually a total of 4 Tablespoons of butter in the entire recipe. The remaining 3 Tablespoons are accounted for in the frosting. Now if you want to simply use store bought frosting though you don’t have to worry about that portion. Hope this helps! -Lindsay

    The title says “3-ingredients” but your recipe has 4, can you tell me which 1 can be excluded?
